How to Use the Tangerines?

However, the quality tangerine is also an excellent fruit to make all kinds of dishes, even salty ones. So today we want to make you discover this fennel and tangerine salad recipe. Do not miss it!

Ingredients (4 people)

½ bulb of fennel, ½ purple onion, 60 grams of sweet corn, 50 grams of duck ham (in a block if it is homemade, or sliced ​​if bought), 1 tangerine, 8 leaves of spearmint, 4 teaspoons crème fraîche, freshly ground black pepper, extra virgin olive oil and salt.


Wash the fennel, peel it to remove the top layer and cut it into cubes. Peel the onion and cut it into cubes of similar size. Drain well the sweet corn. Remove the fat from the duck ham (optional), and cut it into dices the same size as the rest of the ingredients. Mix the fennel, onion, corn and duck ham in a bowl. Squeeze the tangerine juice, chop the fresh peppermint and put both ingredients in the bowl. Finally, add salt to taste, freshly ground black pepper and extra virgin olive oil. Mix well and prepare to serve. In case you want to prepare the salad in advance and keep it in the refrigerator, do not add the dressings until the end. However, the ideal is to prepare it some minutes before serving to conserve all its nutrients. Serve this salad recipe with minced fennel in cups or verrines, and top it with a spoonful of crème fraîche, decorated with a few leaves of fennel.
